I am going to introduce some traditional combo dishes here. Passed on from generations, these recipes are as varied in taste and flavour as they are in the ease of preparation. They can each be had with an accompanying rice item, complimenting each other or all together in one lovely stew. Kandi Pachadi-Menthi Majjiga
Here in this post, I will write both the recipes, for easy reference. Just scroll down to get the text of other recipe.
Kandi pachadi is a chutney made with lentils. Menthi Majjiga is thin buttermilk with added spices. They both can be consumed with rice. Kandi Pachadi is served along with menthi majjiga in my house. They are good accompaniments to each other. Not every household follow this but those who like it surely follow it.



Kandi Pachadi

Kandi Pachadi made with Lentils and red chillies.

Ingredients:
  • 1 Cup Lentils/Pigeon Peas/Kandi Pappu
  • 8 to 10 Red Chillies
  • 1 Teaspoon Cumin Seeds
  • 1 Teaspoon Ghee/Clarified Butter
  • Salt to taste
  • 10 to 12 Garlic Cloves(optional)
  • 1 Teaspoon Asafoetida
  • 1/2 Tablespoon Tamarind
Procedure:

  1. Heat ghee in a kadai, add lentils, red chillies to it.
  2. Fry them till they turn golden brown colour.
  3. Do not burn, fry in low flame.
  4. Once done keep it aside to cool.
  5. Add cumin seeds and asafoetida to it. Allow this to cool completley.
  6. Add salt, tamarind streaks and also garlic cloves (if adding them) to the blender jar.
  7. Blend all of them toghether. Add water little by little.
  8. Make smooth and coarse chutney. It should be like that of a thick paste.
  9. Some people add tempering to it, but we do not add.
  10. Serve Kandi Pachadi with a dash of ghee over hot piping rice and a slice of raw onion. Or enjoy it with a drip in Menthi Majjiga.

Menthi Majjiga

Menthi Majjiga, buttermilk made with spices.

Ingredients:
  • 1 Cup Buttermilk
  • 2 Cups Water
  • Salt to taste
  • 1 Teaspoon Turmeric Powder
  • 1 Teaspoon Asafoetida
  • 2 to 4 Green Chillies
  • 1/2 Teaspoon Fenugreek Powder
  • 1 Tablespoon Carom Seeds/Ajwain/Vamu
  • 1 Tablespoon Oil
  • 1/2 Teaspoon Mustard Seeds
  • 1/2 Teaspon Cumin Seeds
  • 2 Red Chillies
  • 5 to 7 Curry Leaves
Procedure:

  1. In a deep bowl, pour buttermilk and add water to it.
  2. Add salt, fenugreek powder and slit green chillies to it. Mix it well.
  3. Heat oil in a kadai, add all the other ingredients to it.
  4. Add mustard seeds, cumin seeds, carom seeds, turmeric powder and red chillies to the hot oil.
  5. When they start spluttering add asafoetida and curry leaves also. Switch off the flame, immediately afeter adding curry leaves to it.
  6. Add this tempering to the above made buttermilk. Mix well.
  7. Serve this as an appetizer or with rice.
